While rusty, I had fun painting this miniature printed with my new resin printer.
My daughter crafted the fairy house and grounds.

How does the output from this process compare to that of extruded plastic (and I know that is a HUGE range of materials)? Maybe a better question is, given that you now have a choice, what sort of things would you choose to print with this process?

I'm still learning. There are definitely less options with resin. I've just ordered the "ABS like" resin which is no where near as strong as real ABS on a extruded printer. It's supposed to be one of the stronger+flexible resins.
With resin, it takes a long time to print because the resolution is so high, at least currently. So I see me printing detail parts with resin and printing large/strong/super strong/rubber like flexible/foodgrade/etc parts with extrusion.
My immediate need for resin will be things like high detail parts like a lens screw on cap for a camera - but in my case, not a camera but a rocket component.
Even with a high resolution nozzle on an extrusion printer, it couldn't come close to doing this. I love this printer for trickets and small stuff, that's for sure.
I'll come back and answer your question better after I have had more time and more resins.

Using Desktop Hero, my daughter designed this, it was then easy to print! Neat stuff.
The miniature has every bit as much detail as the ones you would get ordering from Ral Partha, Reaper, etc.
